Coconut Lime Energy Bites

Instead of grabbing a calorie packed protein bar, try making these coconut lime energy bites. I love these for long tournament days or even a mid-practice bite.

INGREDIENTS
¾ cup almonds
¼ cup cashews
1 ½ cup pitted Medjool Dates
Zest of 3 limes
Juice of 3 limes
Pinch of salt
1/3 cup unsweetened coconut flakes

DIRECTIONS
Add almonds and cashews to food processor. Blend until smooth. Add the rest of the ingredients and blend until you reach an even consistency. Using a tablespoon or regular eating spoon, roll paste into bite-sized balls. Place on parchment paper. Set in refrigerator for 1-3 hours.
